Too big for the burner; heat does not disperse well
I have a 9" electric stove burner and this pan, 13 ½ " has an 11 ½" bottom. I used it once and while cooking paella in accordance with the recipe, the area in the pan that was not directly over the burner coil did not get cooked to the same degree as the area over the 9" burner. This pan has a sleek look, no dimples in the pan and cleaned up well, but I already have a 9" bottom skillet that did an adequate job with my first trial paella. I thought maybe this authentic carbon steel pan was going to really be the perfect cooking tool, but my regular 9" frying pan did as well cooking, if not better. If they will take back a used pan, I plan to return it. My advice to others buying a paella pan, get only that is the same size as your burner. I even tried putting this pan over two burners but the distance between the two burners was too great.

Just Okay
I used this pan to make a beautiful paella. The heat distributed evenly enough. Novice paella cooks take note, move the pan to cook evenly. The pan is not supposed to be the size of the burner. My issue was after using the pan only once and hand washing, it looks worse for wear. I’m going to try some barkeeper’s friend but I didn’t expect it to degrade so quickly. Before and after pictures included. Next time I would also size up.

Flat bottom
Great little paella pan with a flat bottom can be used on ceramic, induction or standard type electric stove top, as well as gas & other. I have found it very difficult to find flat bottom pans as they all seem to have a convex bottom and do not sit flat. If this is washed and dried right after use with a thin coat of vegetable oil they will not rust.

Good quality and size for 3-4 smaller portions! Recommended flat bottom for electric/induction stovetops.

Very low quality product, can't recommend it at all.
I'm not sure what I received, but it doesn't seem to be the sturdy, commercial grade, carbon-steel product it's supposed to be. First thing, as another reviewer wrote, water won't boil in the pan! I put it on the stove top (gas), added water and put it on med heat. After ~15 mins there were bubbles at the bottom, and that was pretty much it. I gradually increased the heat to med-high, then high, but still, after more that 25 mins, no real boiling. Second thing, the pan DOES NOT distribute heat evenly! While I was watching the water heating in it, there were visible differences at the bottom. A few places had more tiny bubbles at the bottom than others, while vast aeras - mainly in the middle, had no bubbles at all. I have cheap and old (23 years) SS pans that distribute heat faster, better and way more evenly that this. Basically, I really can't believe this is a carbon steel pan. I have another carbon steel pan, 12" wide, and even heating is the first thing you get with it. Maybe I received a knock off, I can't really say, but this is not what I ordered. Sending it back, will replace for a real carbon steel pan, even if it costs a bit more. Total disappointment! Not recommended!

Great for an electric stove
Had to swap out my previous Paella pan for this one because I could not get even heating with the old one's curved bottom. This one has a flat bottom and is actually heavier than most traditional paella pans so holds and distributes heat well. Yes this pan requires a little TLC after being used, but if you care for it properly you won't be disappointed.

Amazing pan but a bit small
The quality is amazing but I regret buying this size. Unless you eat small portions, this will be for 2 or 3 persons max. Used it twice and I'm already looking at 16in. We cook for 2 so it's fine for our needs but we can't share our amazing paellas with guests. Extra info: On the large burner, the whole surface was bubbling, a good thing. Easy to clean - fill the pan with water after use and let it soak for a few hours. Follow seasoning and maintenance tips to keep it from rusting. This is not stainless steel, nice shiny finish went away after only a few use, this is expected with steel pans.

Dry & Oil Immediately
Made several Paella's with Cuisinart's large red Paella Pan, getting crunchy caramelized Socarrat bottom at end always a problem as thin material and "teflon" coating, finally overdid it and burnet on bottom and no way to remove because of coating. So raised bar and bought this and larger 16" cheaper no lid pans for better heat distribution more robust scriptable surface. Used both once each, for increased effect, tried cooking both on outdoor gas Outland brand large firepit using natural gas (see pic of 16" pan), boiled too fiercely, need to raise, so finished on stovetop. 13.5" fed four hungry adults, could have fed 6. 16" is 40% bigger area and after starter fed 12 adults with side vegetable dish. As others said great heat distribution, but against included directions my wife washed smaller pan and set in rack to dry, and got thin patina of rust within 3 min. I re-washed and red and oiled immediatly as per instructions, perfect.

Rusting
I bought this paella pan and it rusted when used. It looked nice and it is heavy. I thought I'll make a nice paella for my son's birthday. Very disappointed.
