I love this pan
This is a heavy duty pan. I've made a couple of paellas in it so far and love it. It is a perfect size for feeding 8-12 people. I fed 6 people last night and had half a paella left over. This pan is large enough that I could easily increase that recipe by 50%. No rust issues. After emptying the pan, I let water soak in the pan for 20 minutes, then use a nylon pan scraper and a nylon bristle brush with only water (no soap) to clean out the pan, then I dry the pan and apply a thin coating of olive oil to the inside of the pan. Before cooking the next time, I just quickly wipe it out with some paper towel and I'm good to go. The pan gets naturally seasoned as it is used. I treat this pan the same as a smaller carbon steel paella pan that I've used for years with no issues. Highly recommend if you enjoy making paella. Oh, one other thing: make sure to follow the directions for cleaning the pan before the first use. It comes bright and shiny inside--don't expect it to remain that way. After using it will look like the picture I've attached and that's what it is supposed to look like! ¡Que aproveche!

Great Pan!
So, this is huge. I think you need to get out your measuring tape and measure just how big 18" is going to look on your gas stove burner. I imagined it as not that much bigger than a foot, and still, the size surprised a bit. The rim measurement is actually closer to 18 1/2". Anyway, great pan. I lived in Spain for a while and observed paella made dozens of times. It is so delicious. I had to learn to make it for myself. And guests. The pan does surprisingly well on our 1 power burner gas stove. The power burner has double flame circles, and is the hottest of the burners on our stove. It will take you longer than your recipe states to get it all cooked this way, but just start 1/2 hour early and you're good. I would say this can serve 8-10 adults. Oh, if your authentic Spanish recipe is for seafood paella, and says to add the shrimp and scallops ANY sooner than the last 5-7 minutes, DONT do it!! Shrimp and scallops need to be cooked just to the color change, not longer. Paella is just that much more amazing with shrimp and scallops that have NOT been cooked to rubber! :)

It's incredible and I can't recommend it enough
Here's what you need to know about this pan. It's incredible and I can't recommend it enough. I made my first paella last night over my fire pit in the back yard and it performed really well. It's heavy-duty so it did not warp at all. 18'' is big; not ideal for a kitchen stove burner. I used 3 cups of Spanish rice and 2 quarts of chicken stock along with chicken, chorizo and veggies, sofrito and saffron. This was a good quantity of ingredients but it could have made more. My party was for 6 people and we had enough leftovers for everyone to take some home. You could easily feed 10 to 12 people. It comes with a little recipe booklet and information about how to prep, use, clean and store the pan. It is steel, so it will rust; just take some paper towel and a little oil to coat it after you clean it. I wouldn't buy pans with red plastic coated handles; they'll melt over fire. I wouldn't buy thinner pans; they might warp; And please don't buy a non-stick pan; you WANT the rice to stick to create the tasty crust on the bottom!

Just like Paella in Spain
This product was made in Spain per the packaging. It was amazing and strong. We cooked dinner for 8 hungry people in it. We made seafood and chicken paella. Cooked perfectly on the grill (18" size fit perfectly on our Weber grill, but definitely measure) for 4 hours and at the end we were able to get the yummy charred crust going with this pan. We've eaten Paella throughout Spain and thought our Paella turned out just as good as during our travels. I would not hesitate to buy this pan again and happy I didn't go with a cheaper version!

Handles melted during initial burn in
Really disappointed here. I was planning to make paella for Christmas dinner gathering. There were some random spots of oils/rosin/whatever came on it from manufacturing that I couldn't wash off so I decided to do an empty run to burn that residue off. I started it in the oven at 400F, but it quickly smelled strongly of chemicals, so I decided to move it out to the grill. It didn't appear to be that hot - with an instant read and with a laser thermometer the pan measured around 350F. And then i noticed whatever the handles were painted with was turning into a bubbling goo. Why couldn't they have used a porcelain coating or anodized coating, or even bare metal instead of a non-heat-safe paint? Watching the bubbling paint was unappetizing so I ended up using the ingredients in a casserole dish instead.

High quality paella pan
This is a very high quality paella pan. It's made of nice, thick steel and feels well made, unlike some of the flimsy, cheap paella pans on the market. I use this to make paella on my grill. I've used Alton Brown's paella recipe from Good Eats, and have had good results with this pan. It holds up well to the heat and seems to distribute the heat evenly. I was very surprised that, when used right out of the box (I didn't even season it, though it would be a good idea to) after heating up on the grill, after adding just a tiny bit of olive oil the chicken I threw into this pan did not stick AT ALL. The paella pan does turn a darker color the first time you use it (at least if used on the grill), which I think is normal. 18" is a fairly large pan. It makes about 6-8 good sized servings. It's great for a group of people. For 1-2 people, you may want to consider a smaller pan (unless you want LOTS of leftovers).

Great Paella
Great quality pan. I suggest following the instructions on boiling water the first time to clean it as I didn’t and I think it would’ve been best if I did. We did not try the paella recipe that came with it but the next time we plan to. I enjoyed it so much I purchased the smaller one for my parents.

Beautiful Product
I was very pleased with the thickness of the product since I planned to use it as a comal over a wood fire. It worked nicely and took the heat. I did clean it and season it first with oil 3 times.
