Ideal for free-form bread loaves
In 2020 I've been baking bread about three times a week, leaning heavily on the famous no-knead bread recipe that first became popular about 15 years ago. Ever since I discovered it, I haven't wanted to use anything else. The challenge with this recipe is that it requires preheating the pan in a hot oven, 450 degrees. A covered cast iron pot is recommended. Sadly, I discovered that none of my expensive cast iron was up to the task, as every piece included at least one element -- handle, knob -- that started to melt at such high temperatures. Or the bread turned out great, but the finish on the pot was permanently crazed. For a modest outlay, I found the perfect solution: this pan. It does not complain about a 450-degree oven. The pan is easy to lift out when it's hot before popping in the dough and returning to the oven to bake. Since it doesn't have a lid, I put a cookie sheet over the top, because sometimes I'm brilliant like that. When the baking time is up, the bread glides right out of the pan. No residue, so it cleans up in about 15 seconds. I can't think of a better solution to my bread baking challenges, and my family loves the bread (which is why I make it so often).

LOVE this springform!!
LOVE this springform! We served 10 different kinds of cheesecakes for the groom's cake for our daughter's wedding and my daughter and I made four of them ourselves: banana pudding, creme brûlée, tiramisu, and an original. I'd only made a cheesecake a couple of times before, so I read up on all the tips to make sure these turned out perfectly, and they were all the rave, but it started with a great springform pan. We actually had two, and the other one did not work like this one! The tips we learned to make it perfect: 1) Use softened butter to generously grease the pan, the bottom, sides and all the way to the top, even though it is non-stick. Using Calphalon non-stick, you will not have to go around with a knife or anything to loosen after the cheesecake is cooled. 2) Tightly wrap the outside of the pan in aluminum foil. (This step is to keep water out! You want to bake the cheesecake in a water bath to keep it from cracking. It sounds complicated, but it's not. Keep reading!) 3) Get a casserole dish that the springform pan will fit in and fill it with about an inch of water. Let this be heating while you prepare the cheesecake. If you forget, our boiling water in the casserole dish. 4) Insert the aluminum foil covered pan with the cheesecake in it into the casserole dish filled with water and bake as directed. 5) When the cheesecake has finished baking, allow it to cool in the water bath, and then to cool completely in the fridge before removing from pan. 6) Carefully open springform pan to a beautiful cheesecake! If you want to give these away or prepare to make several, Wilton makes 9" cardboard cake circles, also available from Amazon. Simply place a piece of parchment or wax paper between the bottom of the springform pan (turned upside down) and the cake circle and close the pan, then grease the circle with butter just as you would have the bottom of the pan. When you release the springform pan, the cheesecake will be left on the cardboard!

Great quality
My pots and pans are Calphalon and I love them. That’s why I decided to buy this springform pan. The instructions said not to grease the pans, so I didn’t. My praline cheesecake came out without any problem. The pan did not leak. I highly recommend this quality pan. The cheesecake was so good, I had to make a second one!

Doesn't Leak!
I bought this last winter when I was doing a lot of baking but didn't use it until yesterday. Because this was the first time I used it I wrapped it in aluminum foil in case of leaking. The cheesecake separated from the sides while baking so I didn't have to go around the sides with a sharp knife. This is nice because cheesecakes can often crack if cake clings to the sides. This proved how non-stick the pan really is! I used a lower oven temperature rather than dealing with a water bath but the pan is absolutely leak proof so if your prefer a water bath this pan is safe. Of course, it is still recommended that the pan be wrapped in heavy duty aluminum foil. My niece sent me a set of springform pans in different sizes; three of them cost the same as this pan. I held one of those pans under running water and the water instantly poured out the sides. Later I tested this Calphalon pan and no water leaked out. This is one time you don't want a bargain pan!

Quality Spring Form Pan For Even Baking
I was debating getting a spring form pan. I already had a circular cake pan, and if you spray it with non-stick spray, you can easily flip a cake over. The issue with that is, you're eating the bottom of the cake which is now on top, which you may or may not care about. This spring form pan is handy because 1) your cake will be in the proper orientation; 2) you won't have to risk your cake crumbling apart because you won't have to flip it; 3) the non-stick coating ensures you have nice edges when you unlock the latch. This is thick and heavy because it's made with a steel core. This will ensure even heating on the bottom and the sides of your cake. The latch stays closed and flips open easily. I currently have Cuisinart and Calphalon appliances and cookware, which are two quality brands that have both served me well, so I usually buy those brands for my kitchen items. This is another quality Calphalon product to add to your kitchen. Recommended.

Great for cheesecake
While cleaning this pan I tested the leak proofness of this item and while it is a tight closed pan water does leak through the bottom. Thankfully when you are making cheesecake you have a layer of breadcrumbs so your batter does not have a chance to leak through. Im not sure how it would hold up with other cakes. Though leakage was minimal, for the people experiencing lots of leakage make sure you have the bottom on properly it is a bit tricky to hold the bottom in place while you snap it closed. This pan released perfectly and it cleans like a breeze. Would recommend for sure

Great quality!
I bought this pan to make cheesecake in for Father's Day. I love the weight, the ease of use, and how easy it is to clean. There was no need to use non-stick spray either. I'm looking forward to many years of continued use of my Calphalon springform pan.
