Changed my review - Sturdy, great pan with uncomfortable handle
Below is my original review. SINCE that review, I had a friend come over with her 35 year old All-Clad pan and a laser heat thermometer. We played around with my stove (which I admitted was awful)... and it has such an incredible heat difference on the burner that I doubt any pan could truly surmount that problem. One side of the burner was 140 and the other 200... that's the difference between undercooking and overcooking chicken right there. I have since been using the pan more cautiously only because of my issues from before, rotating it as I cook. It's just not in our immediately future to replace the stovetop, but definitely on the top of the list. I have kept the pan and realize my review, though full of frustration, wasn't fair to the product. I am still giving it 4 stars - the overall pan feels extremely well made and sturdy, but the handle is gawd-awful uncomfortable, and I stand by my statement that if you need to learn a secret handshake to make it comfortable, it's not intuitive. And as a practical issue, the pan is really heavy, so inevitably if you were to lift it with one hand, you have to grasp the pan and lever the handle along the underside of your forearm to keep it horizontal - and the curved U shape really digs into your arm to keep it stable. It's not pleasant. ----------------------------------------------- Old review: I feel like I bought a completely different item than everyone else here. This thing is a very expensive piece of crap compared to the really old pan I sadly got rid of when I bought this thing. Let me preface this by saying I cook a batch of chicken thighs every week. I marinade them the same way - in some coconut aminos. I had an old Circulon pan that I had been using that had warped so there was a definite lump in the middle, however... moving chicken around, rotating them in and out of the middle, it worked. The biggest burner is not very big, uneven temps at best. Little did I realize that our old crappy pan was a much better option. I know we have a terrible stove, we bought this pan because it claimed heat distribution. We figured the center warp of the old pan was a sign we should replace it, and why not upgrade it with something people swore by? The recipe actually calls for a sear first, and then turn the burner way down to cook the chicken all the way through. I gave up on this the first 3 times I used this pan, just wanting evenly cooked chicken. So this time, no high heat to start (it's an All Clad after all and they claim you don't need that!) So this time, I kept my burner at medium low - on the low side of the medium setting. I use avocado oil. The first pic with the black in the center, the pan immediately started to char in the middle. All the pieces at the edge were still pinkish raw with a burnt edge where they touched the center! I then removed all the chicken and actually cleaned the pan because the entire surface was charred. The second picture is after only 2 minutes or so, as the center starts to burn again. I turned the heat down to where it is in the third pic. I was cooking with it closer to OFF than Medium, and the center of the pan continued to burn, the chicken char, and I can't get it to temp. Yet, you can see the chicken is starting to dry out and char. Third pic I realized I should show that I am really not using some super high temp, everything I can find on cooking with these says "haha inexperienced cooks will use high temps!" Please. What about people that follow all of your recommendations, and still.... Chicken thighs need to reach 185º (breasts only 165º) and I could not get these pieces above 160º despite the fact that they were burning. I made sure there was enough oil, I attempted to "not touch meat until a sear" which just charred an edge, and then ripped that edge off when I moved it, revealing raw underneath. Great. I took all the chicken out of the pan and used the microwave, and I'm now returning this thing. $250 worth of crap. Other stuff. The lid for this is also solid metal, not a big deal but it does mean you cannot see in. If you are used to having a glass lid that will be a change. These pans are really heavy. The handle is awkward, painful, and really not ergonomically shaped. One review I read of it said you have to figure out how to rest your hand in it correctly... honey, it's a handle. The thing you reach for to move something heavy. The pan is so freaking heavy that if you require a secret hand-shake configuration of your hand to hold it, I guarantee you it won't be whatever grip you have the most strength with, and it's going to be nearly impossible to hold it with food in it. The handle is sharply U shaped, and for most of us, lifting a 4+lb pan using a long thing handle requires us to press down with the butt of our thumb to lever/fulcrum the pan level. Try it right now - every heavy pan you have, you press down with your hand against your wrapped around fingers to hold it up. the 2 sharp edges of this U shape dig into your hand and it hurts. I have no other means of applying enough downward pressure to hold the pan up in any way that is comfortable. Plus, the pan will get hot, so the second smaller handle to help you stabilize it will be too hot to touch without a towel or something. I'm so disappointed. I continue to have a really crappy stove, so I need to find something that is going to be able to work with that, distribute heat, and cook a few pieces of chicken without this much hassle.

Amazing!
2 Month review! This pan has been a just amazing. I wish I would have heard of this brand years ago. Slowly but surely replacing my 6 year old $800 set of carbon steel pans with these. This pan is very reactive to heat change but at the same time very forgiving. No matter what gets stuck in the bottom, I'm not worried. Scrub it down with a very aggressive cleaning pad and it's good as new. The middle copper layer does an amazing job of distributing even heat to the entire pan. Steaks, chicken, pasta, rice, deep dish pizza in the oven. This pan can do it all!

Save money and go with 3 ply
Wife loves it but price not a value. Reviews from testers say once you go past 3 ply there’s really no added benefit and this thing is very heavy.

As good or better than expected
It’s a bit heavy and unwieldy when trying to pour from it (I meal prepped a stew as my first meal with it), but it’s not made for doing that, so I’m not dropping marks. The lid keeps condensate in the pot better than most lids, I feel. I suspect I got one that was previously returned. There was a scorch mark and the copper ring was a bit tarnished, but the former cleaned up super easily with Barkeepers Friend soft cleanser. I haven’t tackled the tarnished copper ring. The heat distribution seemed very good. I didn’t have good objective tools, but just touching it at different places, the walls heated where only a little behind the floor of the pan in heat. It heated up quickly and cooled quickly when I was done and I was able to wash it quickly after I was done. Where I was really impressed is how the handle stayed cool despite the pot cooking for 30+ minutes. This is my first ‘nice’ pan, and I’m thoroughly impressed. I don’t know if I can comment on the price yet. I would have to use it a bit more to judge value for the money, but so far, I’d say it’s great.

Take care of it and it will last a lifetime
I am not a chef, I can barely cook to keep myself alive. But I hate buying products over and over. This pan cost a lot, but its deep and works well when I make beef and cabbage. I don't keep mine shiny pretty, I just wash it normal like. So far I am enjoying it. I have no real regrets. OHH....ONE NEGATIVE...The handle sucks. Its pretty uncomfortable to pick up and I am a 5'11' dude. I always use the second handle when picking this pan up. But, I am one of those folks who does not expect my car to ride smooth. I am happy in a jeep just as much as a luxury car, so even though the handle sucks, I'd still buy it. I figure this thing hold so much food, I am not gonna be picking it up and flipping food like a frying pan so the handle really does not matter in practice (at least for how I use it).

ALL CLAD Copper Core return 5 qt sauce pan with helper handle - fantastic
I love the AC Copper Core line. I have had a 6 qt D5 version above for 5 years. Excellent when you need to feed many people. My fave is my 2 Qt TK saucier (discontinued). Also have a 6 qt dutch oven. This purchase was a b'day gift for my SIL. She loves it.... I have too many AC pots & pans, some very old... Curious about Demeyere (have their roaster) but have no storage room. Se la vie. The things to know are: -low-moderate heat (copper layer heats up faster) -once pre-heated, brush some oil or butter on the bottom of pan -do not dunk hot pan in cold water (or under a cold faucet stream) - bottom can warp -soak stuck on food like scrambled eggs with water, heat & add Dawn, turn off heat, let sit a couple of hours or overnite. - food usually detaches easily or w/help of a blunt plastic scraper if needed. -scour with mildest pad or a small microfiber cloth with baking soda or Bon Ami/ Bar Keeper's Friend........

Viel Geld für viel edles Metall
Ich bin ja begeisterter Käufer von gutem Kochgeschirr (gern auch eher für die Vitrine) und wenn Kupfer zu sehen ist, kann der Preis auch gerne mal durch die Decke schießen. Durch einen bekannten Youtuber aus den USA bin ich auf All-Clad Töpfe gestoßen, welche dort wohl deutlich verbreiteter sind und als einer der wenigen Non-Plus-Ultra Hersteller gelten. Lang war es gar nicht so einfach in Deutschland dort heranzukommen und ein alternativer Importeur hat Preise aufgerufen die nicht mal ich bereit war zu zahlen. Aber jetzt bietet der Amazon Verkäufer in den USA Internationalen Versand an. Und ja, der Topf (ich schreibe Topf weil Sautoir kein sehr verbreiteter Begriff hier bei uns ist) kommt per Schiff aus den USA angeliefert, es dauert also ein wenig länger. Egal, dann war sie also endlich da. Und im ersten Moment bin ich wirklich beeindruckt. Spiegelglanzpolierter Edelstahl mit einer eingedrehten Nut auf den Kupferkern – Nur eine optische Geschichte aber das weiß wirklich zu gefallen. Die Innenseite ist wie üblich bei Edelstahlgeschirr matt geschliffen. Die 5 Quart entsprechen übrigens 4,7 Liter, man kann also praktisch 1:1 umrechnen. Für einen Topf ist die Standfläche sehr groß, das sollte man bei seinem Herd im Hinterkopf behalten – Anscheinend ist breites Geschirr in den USA üblich, bei uns sind es ja eher hohe Töpfe. Für das reduzieren oder anbraten ist eine große Fläche natürlich von Vorteil, besonders hier weil die Wärmeverteilung wirklich exzellent ist. Die genieteten Griffe aus gegossenem Edelstahl machen ihre Sache gut – Etwas ungewohnt bei der Größe ist da natürlich der Stiel. Eher etwas gewöhnungsbedürftg weil der Topf recht schwer ist aber der Griff auf der Gegenseite gleich das aus. Einen vollen Topf würde sowieso niemand versuchen nur am Griff anfassen, ein Unglück wäre da vorprogrammiert. Auch die Form des Stielgriffes, halbhohl nach oben, ist im ersten Moment etwas komisch, fasst sich aber nicht unsicher an. Daumen und Handballen kommen gut in der Mulde zum Liegen. All-Clad sagt, der Topf ist spülmaschinengeeignet – Das würde ich ihm wirklich nicht antun wollen. Auch nicht testweise. Ich bleibe hier bei Handaufwasch. Generell das Kochen ist eine Freude in dem Topf. Wärmeverteilung, Reaktion auf die Kochfeldeinstellung, Robustheit beim Hantieren, alles auf höchstem Niveau – Klar man hat viel Geld ausgegeben das sollte schon das mindeste sein. Aber es ist einfach wie Heimwerken mit gutem Werkzeug. Es macht einfach Spaß seine Investition (mehr oder weniger im Anbetracht der privaten Nutzung) gerechtfertigt zu sehen. Ist es was für jedermann? Nein, ganz klar. Man kocht nicht besser oder schlechter genau wie man mit einer teuren Kamera nicht automatisch bessere Bilder schießt. Am ehesten findet sich ein Käufer der gerne ein Schmuckstück, vielleicht auch zum Servieren auf der Tafel, haben möchte. Oder anders gesagt, Freunde der gehobenen Küchenausstattung auf De Buyer Niveau finden hier eine Interessante Alternative.
