I lived in Japan for 7 years using the traditional nabe pot, which is great but a lot of work/prep. That’s why I’m so impressed by this electronic one. Was able to give my parents an authentic Japanese meal….and they usually hate everything, lol. They loved this!

I love this electric nabe pot so much!! It heats up fast - you must keep lid on to get broth boiling. It holds enough nabe (Japanese hot pot) stew ingredients for four people at a time, maybe a little more. Don't let the depth fool you - you can fit a lot in here! I use it for cooking nabe all winter long. I have also sauteed in it when my stove was occupied by too many pots. Keep in mind that the primary use for this is to heat liquid or semi-liquid foods like stews and broths, even fondues. That is why the bottom of the pot is slightly concave because it is not meant to be a flat frying pan. I think Zojirushi tries to demonstrate American recipes in order to market some of their products in the US, when these products were really intended to make certain Japanese recipes. So some people get confused about how this kind of pot isn't perfectly flat on the bottom, or wonder if it's supposed to be like a crock pot slow cooker, etc. The concave bottom helps with heat distribution and it is made for cooking soup-type foods to be eaten immediately AT THE TABLE while you cook, like nabe, sukiyaki, shabu shabu. If you can find other creative uses, that's great! But don't expect it to do all things as if it wasn't primarily an electric Japanese stew pot. It's also super easy to clean, and very safe with the cord that unplugs if tugged while in use so it doesn't still the pot all over. And electric is much safer than those gas canister nabe burners I used to have! If you are considering this one, the EP-PBC10 or the other Zojirushi model EP-RAC50 that has two inner pots (one deep and one shallow), I highly suggest getting this one, the EP-PBC10. The reason is because the depth of the pot makes zero difference if you are sauteeing food, which is what Zojirushi tries to say the shallow pot is for with the EP-RAC50. But I checked out that model in person at a store, and the shallow pot still has the slightly concave bottom as the deep pots, so it doesn't make any difference when sauteeing. You could do the sauteeing in the deeper pot. The inner pot that comes with this EP-PBC10 model is in between the two sizes of the pots with the EP-RAC50. I find the one pot that comes with this EP-PBC10 model to hold enough volume for the four-person nabe stew cooking I do. If I had the EP-RAC50, I would probably never use the shallow pot, and the deeper pot would be bigger than I need. I hope this helps anyone else who wondered the same things that I did about these two models.

"simmer" means with the lid off (and some other useful tips)
This skillet (really a shabu-shabu pot) and an electric teakettle were my only cooking devices for two full weeks (we had the gas off for a remodel), so I got to know it pretty well. It will do almost anything you ask of it, but you have to know its foibles. - the bottom is bowed up very slightly. This makes perfect engineering sense - a completly flat metal surface will warp outward over time as it repeatedly cools and heats (unless it's a multiply like all-clad), and once it's warped you won't get good contact with the heating surface. From a cook's perspective, hower, be aware that oil or raw egg put in the pan will tend to gather around the outer edge. The pot still makes excellent scrambled eggs - I used a wooden spoon to stir them instead of a fork, which made it easier to gather the eggs to the center as they solidified. - the thermostat is what electrical engineers call a "bang-bang controller". That is, the heating element is either full on, once the pot has dropped too many degrees below the set temperature, or full off, once the pot has gone too many degrees above the set temperature. This produces the bizarre result where the pot is at a low simmer, and then you take the lid off, and it goes to full boil. On a stove, opening the lid lowers the temp of a pan, here, lowering the temp makes the heating element go on. So if the pot is boiling over, turn it down and then lift the lid. - "simmer" means with the lid off. This is really a shabu-shabu pot, designed to cook food at the table by swishing it in simmering broth (the Japanese name "shabu-shabu" comes from the sound thin-sliced meat makes when you swish it). I'm sure the executives at Zojirushi are scratching their heads at the Amazon reviews, and wondering why Japanese have no problems keeping the pot at a simmer, while Americans are complaining that the temperatures are too high. Well, if you want to simmer with the lid on set the pot to "keep warm". I used this pot for everything from soup to chicken and rice to scrambled eggs. It works wonderfully, if you work with it.

The best hotpot on the market that I could find
I have already tried this hotpot, and was very pleased on all counts. It heated up well. It is a great size. It looks attractive on the table. It was easy to clean, and to use. I first saw one of these at the home of a Japanese friend and liked the sleek look and not having a divider as some Chinese hotpots have.

This is my favorite pot I have. I use it to have hot pot and bbq every week. It's easy to use and control the temperature. Also it's easy to clean.

A versatile pot for a small family, but cleaning is a challenge.
The coating on bottom comes off every time I wash it. Before first use, put in dishwasher, then I had to wipe the pot bottom with paper towel, it turned into grey/silver from black and some scratching marks showed up. The inside of pot is brand new no marks/scratches showing it’s been previously used. It happens every time I wash it very frustrating. Despite the cleaning part, I’m very satisfied with this product. It heats up fast, non-stick. I tried Korean BBQ too, it works perfectly.
