Lighter Weight an initial Worry in performance 2 achieve a Good Sicilian pizza style Thick Crust
I was expecting MUCH heavier thicker pans.. HEAVEY WIEGHTS That I've used before professionally in my restaurant and catering work And what I grew up seeing exclusively used in every pizza place in NYC especially Brooklyn were I was born INTIALLY I was very disappointed & doubtful and concered with my maybe too quick dession that I BOUGHT 2 pans the smaller starter square: SICILIAN and the larger longer " Grandma" sized pan with lower rims Both were lightweight and not the thicker heavy pans I used b4 and hoped for..my fault for not reading the detailed descriptions of the pans But I decided to try them out anyway and not just with pizzas as they are baking pans soi wanted to see how useful they'd be baking n.roasting other things.Even a lasange I heated oven for two hours oven to maximum while removing my poolisg. Based Gough using 00 imported Caputo brand flour and another.batch using Anna's Brand 00 imported flour..Fresh cake yeast for both 1/4 of a small square of the yeast for both I find Fresh yeast stronger more vigorous and gives a better fermentation flavor to use and just all around better to hunt down Which I store in my freezer I kept the dough wetter and used the fold slap technique of kneading halfway thought the rising then tuck roll into balls coating lightly wi At this point I do other prep work getting my tomatoes opened removing Any seeds squishing whole pieces if I want garlic ill add it sliced paper thin ripped basil leaved fresh ground black.pepper to steep in tomatoes over night in a glass Jar NO SALT added of needed the tomatoes and cheese are high sodium and NEVER add sugar I'm not making dessert A splash of strong xxrea Virgin olive oil van be added those the dough balls are coated and the pans will be brushed and doughs crust edges with have olive oil so it's really unnecessary I'd advise against it The tomatoes bake on the pie n keep a fresher brighter profile u can't mix in a bit of GREEK OREGANO preferably the one still on the stem sold in bags which I leave it ib stored in a X Zip lock or put the package in a tall big jar When ovens as hot as possible heating for an hour 20 minutes before I remove Doug drop into he prepped pan (s) and gently start to evenly push dough out for. a equally complet

Team square pizza, more crunch!
So this is my second Lloyds pan. The first was a Detroit style Pizza pan which I use often. I purchased this one because I want to make larger pizzas and it was on sale. Works as good as a Lloyd pan should. Easy to clean and makes a nice large pizza which feeds 2-3 ppl. The one thing to note is that it’s only 1.5 inches tall, so while it’s not as tall as a DSP pan, it works fine with nearly all pizza dough recipes. Gets a nice crispy bottom and slides out of the pan easily (use oil). Lloyd pans aren’t cheap, but if you use them often (they are durable) and learn how to use them well, than they pay for themselves very quickly. Once you learn how to properly stretch the dough then square pizzas become delicious, crispier alternatives to other home baked pizza styles. There is nothing like a good cheese pull couples with a crackle of crispy crust. Team square pizza right here!! Buy this pan and USE IT!

Worth it!
I adore this pan... I have paired it with my Bertello pizza oven and I can achieve an authentic pizzeria experience, fit for a snob. Unable to get a decent pie down here in Florida, I am very thankful for this product!

Definitely worth it for me
I put off buying this bc of price for a while. I have the large Detroit pan, and love it. The 12x12 Sicilian pan is a very good size for two hungry people who want some leftovers, without having a week's worth of pizza to eat afterwards. Easy to use, easy to clean, just nice all around.

does NOT fit in a 12" Breville Smart Oven. oh well, not the fault of the product.
Was hoping to replace the 12-inch tray from my Breville Smart Oven. This fits from side to side, but is too deep for the door to fully close.
