Love the vessel, hate the company.
This is a high quality 1L pressure vessel that will meet your demands up to 32bar, regardless of gas used to pressurize it. I said it that way because I absolutely HATE the company for making their "Nitro" system incompatible with their normal system because they used different sized threads. This was completely unecessary and clearly just a money grab because of the booming coffee industry. They market the two different systems as one being safe for N2 (nitrogen) and the "normal" system (N2O for whipcream) not... this is just simply not true. The "normal" isi gourmet is rated to 32bar and even states in the manual it's safe to charge 2 N2O (nitrous oxide) cartridges into their 1L vessel. Doing basic engineering math that adds up to be true. Remove that oxygen molecule leaving just N2 (nitrogen) and doing some basic engineering math again shows that you can charge several standard 2.2gram N2 cartridges into the vessel and still be 100% safe. Note: I'm an engineer, but if you want to verify for yourself just research the ideal gas law. Thus, this begs the question, why is iSi lieing to its customers and making wildly flase marketing claims? Marketing lies to create a flase platform in order to sell a product that is in all essence the same... potential lawsuit is all I see. But hey, I guess they just want take business away from themselves and give it to other N2 manufacturers like whip-it.

High-quality design and construction.
Well-made and reliable, and a pleasure to use! Makes the best whipped cream. I can just tell it's going to last a long, long time. The manufacturer makes replacement parts available if ever needed too, and this is a top-notch brand that surely isn't going anywhere.

Device is fine; CS is non-existent.
I bought a .5 L and a .25 L, both in iSi’s Gourmet series. They are expensive. They work fine. The company says that they will extend the warrantee if you’ll register. I tried to, but the followup email to validate my email address for the account was never sent to me. If you try to call their phone number, you get two choices: Customer Support, and a General mailbox. Choose the CS extension, and your call does nothing, and is eventually disconnected by their system. Nobody ever answers the General extension. I you click on their CS email support link, your email to them eventually gets bounced back to you as undeliverable, so there’s no help there. I can’t log into my account because my email hasn’t been validated, but any attempt to register again says that my email address is already in use. You might guess (correctly) that my email address has been harvested, and they do just fine at sending me marketing emails. Manufacture is Chinese, according to the carton. Nothing is wrong with that, but they play up their Austrian identity, and etch a Vienna address on the Chinese-made stainless steel bottle. Click on the iSi US site, and you’re redirected to their Chinese division. Other than the fact that they have a documented history of use in high-end kitchens, the operation shows every sign of being a scam. To repeat, the devices themselves work fine, but the customer-facing functions of the company are below terrible.

Professional whipper
iSI makes a number of whippers, for both the home and professional user. The GourmetWhip is the professional version, which means that it is all stainless steel, dishwasher safe and easily cleaned, which is not true of their EasyWhip home version cream whipper. The 1 quart (1 liter) version is the largest one sold -- they also have half size (500 ml or 1 pints) and a quarter-size (250ml or one cup). The size is somewhat misleading, because you only fill the device half full -- the rest of the space is to hold the compressed gas. Either nitrous oxide (N2O) or carbon dioxide (CO2) can be used. The nitrous oxide cartridges are listed as cream chargers, where as the carbon dioxide ones are called soda chargers. The whippers come with an assortment of tips for making various shapes. There are myriads of uses for these whippers, and I have five of them in various sizes, including the ThermoWhip which has a double-wall insulation and is used to hold hot foods. In addition to whipping cream or making carbonated drinks, the two most obvious uses, chefs like Ferran Adria use them to make espumas or foams of various types. Max's Restaurant in Santa Fe makes an amuse bouche consisting of a thin slice of watermelon that has been compressed in a chamber vacuum, and topped with a goat cheese foam. I would recommend two useful accessories to go along with the GourmetWhip. The first is their cookbookiSi 9012 The Trick with the Whip- Creations Cookbook . The second is the iSi Funnel and Sieve, which fits directly over the iSi shipper, and greatly eases filling it. They also make a selection of sharp tips, which can be used to fill small pastries, bonbons, etc. One of the most intriguing uses of the GourmetWhip was introduced recently by Dave Arnold of the French Culinary Institute. It uses a technique called nitrogen cavitation to infuse flavors into liquids. Let's suppose you would like to make some vanilla-flavored bourbon. Simply slice two vanilla beans lengthwise, and then cut them into small 1 inch pieces. Drop them into the GourmetWhip and add 500 ml of bourbon, and charge with four cream chargers (or use the half size GourmetWhip and cut the ingredients in half). Put the GourmetWhip in the refrigerator for at least two hours, or better yet, overnight. Then, holding the whip upright (NOT upside down), press the trigger to release all of the pressure as quickly as possible. Voila -- instant vanilla extract! What is happening is that when the whipper is charged, nitrogen enters the cellular walls of the vanilla bean. Then, when the pressure is released suddenly, the nitrogen escapes rather violently and blows the cell walls apart, so that the flavor compounds are released into the bourbon, rather than taking months of soaking to accomplish the same thing.

This is solid and feels like a very good quality item. The threads are beautifully made and the head screws on easily. The cartridge holder is substantial and it makes me feel safe when I screw in a cartridge. I had read about some whippers made by "The Two Stephens" that exploded and caused injuries so I was very nervous about inserting the casing. However, the construction of this item is very reassuring and all went well. I did not use ISI cartridges although it said I should and they were fine. Initially, the cream was liquid but after shaking vigorously a few more times, all was well. I think 'vigorous' is the operative word. I was too gentle at first. I have a whipper that I bought several decades ago and it was made by a company that was bought out by ISI. The improvements I see are thickness of steel, better casing holder, the addition of two additional dispensing heads (There are 3 altogether.) and a brush cleaner. This is something I would see in a high end restaurant. I am impressed and LOVE this item.

Professional kit for the home enthusiast
A really beautifully made piece of kit, all stainless steel and exudes real quality. Easy to use and to clean. Makes great foams thickened either with cream or gellatine/agar agar etc. The included recipe leaflet has a chocolate mouse number - good chocolate (I used 65% cocoa from Aldi) and double cream, heat and mix together, strain into the syphon, charge with 1 gas cylinder, shake vigorously and refrifgerate for a couple of hours - mmmmmmm. Dead easy and very tasty. I have made tomato foam thickened with agar agar and that was successful also. Your imagination is the only limit to what you can make with this kit!

Good Quality
This is my second whip cream maker. The first one I bought I was frugal and bought a brand that was 70. The cap ended up breaking and the whole time I was using it I thought I should have gone for this more premium brand. I am happy with this product. The quality is top notch and it makes delicious whipped cream. It also keeps in the refrigerator for a week, which is fantastic. If you are on the fence, go for it! you will not be disappointed

Super! This kit comes with the 1/2l tank, dispenser head, 3 nozzles, Cleaning brush, canister attachment, blanking plate and and instruction book. Really well packaged and really durable. I found a small metal funnel from the local hardware store that works well with it. Make sure you only put liquids in it. as the gap whilst dispensing will get clogged and leak temporarily. (I found out whilst marinating chicken and forgot about the sesame seeds) used the brush and it cleaned out fine, maybe smaller stuff would fit? Good for cream, foams, marinating meat/other stuff, extracting flavor among other things.
