Review of Chef Pro FBM108A 8-inch Tortilla and Flat Bread Maker
The Chef Pro 8-inch Tortilla Maker works as advertised (something new and different). It is so much easier than using a skillet. This earned it five stars in my book. One thing to make note of: the dough must be slightly moist and after you divide it into individual golf ball sized portions, it should sag slightly. Under these conditions, you should get perfect tortilla pancakes every time. The operation of the appliance is very simple: Plug the appliance in and turn up the heat to max; wait until the ready light comes on; place the dough ball slightly off center towards the hinged edge of the appliance; flatten the ball slightly with the palm of your hand; press down firmly on the handle for up to five seconds-you will hear a loud screeching noise (this is the sound of water vapor escaping); raise the handle; gently lower the top of the appliance without pressing; let it cook for 10 to 15 seconds depending on your likes; raise the lid and flip the pancake with a teflon spatula (do not use bare metal as it will scratch the teflon coating of the appliance); repeat the process on the second side; remove the pancake and place it on a rack or in a tortilla pancake keeper and you are ready to make the next pancake. Cleaning the appliance is a snap. Use a soft cloth so as not to scratch the teflon surface (such as a microfiber dish cloth) and wipe down the two surfaces of the appliance. I clean mine when it is still hot, but you may want to be more careful and wait until it cools down somewhat. One word of warning: When you press the ball of dough into a pancake, be careful. Your hand/arm could be splattered by very hot droplets of water if it is close to the opening between the top and bottom plates of the appliance. Once was all it took me to learn where not to place my hand. I highly recommend this appliance if you are wanting an easy and foolproof way of getting uniform tortilla pancakes every time. Dislikes? They could have added an extra two feet to the power cord which I thought was a little short. But we live in an imperfect world and that is not a good enough reason to lower my rating. I can now make perfect tortillas every time.

Not good for rotis, lacks enough power
I bought the 8inch version. I had great hopes for it having used a roti maker successfully in India during a trip recently (ELBRUS Home appliances rotimaker), we used that to make stuffed parathas, rotis etc. that also had the same issue that rotis would be chewy if not eaten right away, but parathas were great and it had enough power to cook them, it seems the Indian manufacturers are not able to design the device for 110V power, so the rotimakers here are low power and only option is to roll them in the roti maker and cook on the tava. This rotimaker could not do the rolling part also efficiently, most of the time the roti will get stuck on the top plate. The plates are also not fully flat, the surface is slightly uneven (both top and bottom), seems poor manufacturing process. I tried another one from a friend (bought from local desi store) saachi brand, that was even worse than chef pro, as the rolled roti would be very small. I had to ultimately return this rotimaker. Maybe the 10inch version heats better as it has higher wattage. Leave a comment if you had better luck with the 10inch version for making roti/paratha as I am thinking of buying that, I don't intend to use it for tortillas.

Not for making rotis
I bought it to make roti (Indian version of tortilla) but was not successful. 1. Made dough really soft and kept it covered for 30 minutes - This made flattening of dough easy 2. Used maximum temperature - however, the temperature was not high enough to prevent my rotis from becoming chewy. Rotis never puffed as it happens on pan or gas and took lot more time to cook 3. It could be good for making tortillas but not for rotis I returned it after 2-3 trials.

The video review speaks truth!
Originally we had the common cast iron press to make tortillas - which were more akin to flat bread than a tortilla. I wanted to know the secrets of these mexican restraunts and why their tortillas didn't shrink into 2 inch thick pancakes like ours. This product is the solution to the problem. Now we can enjoy actual tortillas. It took us a try or two to find the sweet spot on the heat setting. The first tortilla was a gooey mess. We turned the heat up a smidgen and started getting the same results as the video review. Also the handle on the 8 inch maker doesn't feel as cheap as some of the 1 star reviews claim. I'm glad I didn't listen to them.
