Best mashed spuds
I top my beef and lamb pot pies with a garlicky potato mash and this thing has helped me lift my spuds to another level No lumps bumps or anything that’s going to stop my mash being silky smooth Sturdy frame which securely holds the mesh nice and tight I’ve put a heap of potato through this thing and the mesh is still as tight as it was day one Have used it for sifting flour and for washing fruit and veg as well A great tool for the kitchen and well worth the money

Throw out your other sifters
I really do not like the sifters with the trigger handle and the turn handle sifter is just tiring after awhile. I can dump several cups of flour, with baking powder, baking soda, and cocoa into this and have sifted ingredients in no time. Tip: sift onto parchment paper for easy addition to a bowl or stand mixer. Way back, I admit that I put sifters away without washing because I thought its just flour, and I thought washing sifters would rust them. I now know that flour may contain E. Coli, and everything that comes into contact with flour must be washed thoroughly. I’ve never had any problems with this sieve rusting. The four stars comes from having to keep pushing down wayward pieces of metal in the screen. Otherwise, this is a great sifter — just be careful with the bits of mesh sticking out.

Thomas Keller would use…
Needed this for a recipe. Worked great. Screen is correct size, and it’s sturdy enough to push boiled potatoes through to make potato purée. I can’t tell if it’s steel or stainless, so I dry it well after washing.

Versatile, easy on aging hands
Winco Stainless Steel Rim Sieve with Mesh, 10 inch Diameter -- 1 each. While I have yet to try this while actually baking, other reviewers have said it works well. I took one person's advice and finished drying it in a warm oven to be sure no moisture was hanging around to cause a speck of rust. It was about the same price as traditional sifters I've always used, but its versatility attracted me. I wish they made one about 6" or 7" in diameter for us home bakers. One small downside is storing it so the screen is protected from popping out. I imagine it goes in the DW just fine, though it came with no instructions. I tested it with unbleached AP flour (piece of cake), coconut flour (required a spoon to break up lumps) and almond flour, which was more challenging because of its density and moisture/oil content though it did sift it nice and fine. Agree with another reviewer that this should be SO much better than crank or squeeze sifters if I ever get challenged with arthritic fingers.

Great accessory
Perfect for making the creamiest mashed potatoes. Great size to do so and makes it easier to fit into or above a large bowl or pot. Can be used for other dishes as well. Be careful of frayed ends that protrude from where mesh was tucked and clamped. I hurt myself the first day washing it for first time use.

French Macarons (Almond Flour)
This was purchased for sifting the almond flour and powdered sugar mixture for french macarons. It's an excellent sifter. The holes are perfectly small enough to make let through the macaron mixture consistency that needs to be achieved. FYI - the consistency needs to be that of a cake mix, super fine. The only downside is that there is an indent inside of the sieve and the bigger chunks of almonds get stuck in the indent. Also, particles of the almond flour gets stuck in the lining where the wiring and the frame meet, which makes it difficult to clean and get out. When I did try to wash the sieve to get the almond flour and powdered sugar out, it made the mixture gunky and it was an even bigger hassle to pick out the chunks. I eventually cleaned it with a toothpick. And it took a long time to air dry between that lining, as well. If you're super OCD about food particles getting stuck in the sieve, this might not be the best sieve for you. I haven't tried sifting anything else except the almond flour and powdered sugar.

Wire sieves
Medium quality sieves. Acceptable price. I used these for steaming dim sum. The wire mesh is mounted a little too close to the bottom edge for these to work well in that application. Also, these sieves do not nest, which was not clear to me from the photos. That is not a product flaw, it just means these do not work well for my intended use.

Sifting made easy.
This style flour sifter is the type I used in culinary school. It is super quick and easy to sift dry ingredients like cake flour, cocoa powder, or all-purpose flour (you don't need to sift bread flour) with a flat bottomed sifter and I wouldn't go back to a bowl-shaped sifter again. This size is large enough to hold all of your dry ingredients at once if you are a home baker, and small enough to fit over a piece of parchment paper or bowl to sift into. My only gripe about this particular model is that it has an indentation around the perimeter of the inside that tends to hold onto some of whatever you're sifting. It isn't the worse thing ever and doesn't affect my overall happiness with this product. Don't wash your sifter, store it in an airtight bag or in the refrigerator if you have pest problems.
