These do NOT come apart
These are very nice, well made with great finish. I did not appreciate getting an "open" package as the package I received had been cut open and not taped or resealed in anyway. I would have kept the shears do not come apart for easy cleaning. They were returned.

Indestructible Shears
These are solid, heavy in the hand, and feel like they'll probably last forever. I can easily imagine passing them to my grandchildren the way some of my grandma's kitchen tools have come down to me. Definitely built to last - unlike my last pair, a standard plastic-handled shear that literally snapped when I tried to cut a rather woody flower stem. Though I doubt I'll ever need another I'm considering buying one just to have the extra around.

Superb, Traditional Kitchen Shear
VERY well-made. These cut beautifully and feel good in the hand. They ooze quality, unlike typical kitchen scissors. We have used (and still use) most of the typical brands - Fiskars, Henckels, Wusthof, etc. The construction of the Mercer Culinary forged shears, however, promises a much longer life than the others, the ability to sharpen indefinitely, and should hold a better edge. Why 4 stars? First, they are quite stiff. I expect this will resolve with use and will update my review if and when they do so ... along with any consequent changes in the cut. Second, in addition to the typical lid remover, the shears have a bottle opener. That's completely unnecessary in my view and lengthens the shears besides. I would prefer more cutting length or a shorter overall shear. Third, they don't come apart for cleaning. That's NOT a deal killer, as these are easily washed (and sterilized, if wanted), but does mean more cleaning effort after cutting, say, chicken or pork. (On the flip side, this type of shear is much better cutting poultry and meat.) If this is your type of kitchen shear, these are as good as they get. I like them - very much - as an additional set in the kitchen. While I received them specifically for review, they will occupy a permanent spot in the kitchen.

Serious Shears
These kitchen shears seem almost like they'd be at home on a surgeon's instrument tray; which might be appropriate should I ever need to dismember a fryer chicken. Still, they go out of their way to satisfy my dissatisfaction with our previous kitchen shears: a pair from KitchenAid with a big, floppy silicone rubber handle. I never thought those were sturdy or precise. So, these pure metal shears eliminate that; they are rigid and precise. The cutting edge is sharp. The fulcrum is tight. I did not see any instructions, so I had to search online for "parts of a kitchen shears" to find out that the nibs at the end of each finger loop are supposed to be used as flat head screwdrivers, should you have an emergency in which dedicated screwdrivers were not available. And apparently you can use the holes in the middle to crack open lobster claws or possibly open bottle caps. In general, I think that sort of thing could be better handled by a dedicated, cheaper device. It gives the whole gadget an awkward feel. I like these well enough, they give a well needed cold professionalism to my knife block.

Balanced with a Little Heft
Review for Multi-Purpose Kitchen Shears: I’ve always been a fan of using kitchen shears since the first time that I’ve tried them. I use them for everything in the kitchen. It’s more convenient to cut and snip with scissors than having to get out a cutting board and knife for most jobs. Mercer Culinary kitchen shears are a high quality forged high carbon stainless steel so they should last a lifetime with proper care. They can be sharpened too which is great because serrated shears can be hard to sharpen. The handle and weight are nice and balanced with a little heft.

Sharp scissors, but not meant for small hands
These scissors are sharper than any other kitchen shears that I've ever owned, and I like the serrated bottle opener on the handles. Unfortunately, because of the opening between the serration and the blades, I am unable to open the blades wide enough to cut anything thicker than about 1/2-inch. My husband doesn't have this problem because his hands are larger than mine. If you have small hands like I do, these probably aren't the scissors for you. If you have medium to large hands, you'll probably love them.

Great Quality Scissors
These scissors are super sharp. They are also light, and thin. I was expecting something thicker, but they have a nice slim vintage feel to them. They cut through meat with ease. They felt a bit stiff when I first got them, but now I am used to them. They sort of look like scissors my mom used to use to cut clothing. You can basically cut anything you want with these as they are sharp! If you want something cut, these will most likely cut it.
