Most deep-fat bi-metal temperature probes of this type are junk, made overseas. This is my third one. Most are made in China; this one is made in Vietnam. Probes of this type are generally off by 10-40 degrees F, right out of the box, and if you drop it, or it's dropped during shipping, forget about it. These units have all the problems that wind-up watches had until quartz movement came about. This one, like many others, has a nut at the top of the probe, just underneath the dial, that you can crank with pliers to make the temp reading accurately correspond to the temp of the measured object (I used boiling water). I test all of this type probe in heated water on the stove. With the probe inserted into the water, when the water reaches a rolling boil, if the needle indicator is not at 212 F or 100 C, use the pliers as you hold the dial still to adjust the dial indicator needle to the boiling point of water. This will at least make this unit accurate at 212 F, but don't forget the unit might not reflect the ambient room temp accurately when allowed to cool (my house is maintained at 76; unit shows 100 room temp although calibrated to show boiling water at 212) and may not accurately indicate frying temps of 300-375. The US does not offer a quality unit of this type. You take your chances with all of these, whether you spend more or less than the cost of this unit. The best solution is to stop relying on these cheaply-made unreliable bi-metal probes, and to spend the money on the Thermo-pen Mk IV probe. I won't review that unit here, but a quick search will lead you to the correct official site. As for this unit, I've got it dialed in to accurately reflect stovetop boiling water, but, as I stated above, this is no guarantee this unit or others like it will be accurate at deep-fry temps. I will use my Thermo-pen to test the accuracy of this unit in boiling oil. I will post the results here. Update: I have calibrated this unit with my super-accurate, expensive themo-couple device. As expected, inaccurate under 200 degrees. However, accurate over 300 degrees, which is where one starts to actually deep-fry. As long as I can have an accurate deep-fry probe for the range of 300-360, I am happy. I am happy with this unit, as verified by my thermo-couple tester.

Works fairy well. I use this for most of my hot oil cooking. Just sucks you need to have about 2 or 3 inches of the end covered for it to read. So pan frying in the house is hard with about 1 inch of oil in the pan. Also, the temperature rises very slowly. My oil can be up to temp, but from 0 to 350, takes about 30 seconds to read. Which doesn't seem like long, but that window can make or break your meal when you're frying.

I should have been more careful
The photo I saw at first look, did not look THAT long.It did say 12" long but the photo had me convinced for some reason it was short.I dont know if its any good, because I likely wont have much use for it.

FAST and USEFUL. Not great for reading liquid temperatures but should be fine for your turkeys.
I bought this to help me manage the temperature of milk as it gets heated for the making of yogurt. it's almost 13" long and has a great clip so you can raise or lower the thermometer stem to the perfect place. If you take it out of the holder and run your fingers over it from the bottom you will feel the heat sensors - letting you know that you have to be at least 2.5 inches in for it to begin accurate reads (that's a bummer). The gauge also is in increments of 50 starting at 100º Fahrenheit, so finding the critical 110º cooling temp for the milk is pretty tough (but I can't take away a star for not doing something it never promised it would do). But as for design it's kind of cool to have it be just below eye level so that farsighted blokes like myself can see the dial and numbers but those tic marks are impossible for me to distinguish. The holder has a clip and a loop to help handle it and it seems to respond pretty quickly.

Could cause potentiall dangerous condition of over heated oil
Bottom line is that I bought the wrong thermometer. This thermometer was made for use in deep frying turkeys as its label clearly states. It needs to be in over 4 inches of oil to register the higher temperatures (above 290 deg. F in my case). In its first use I wanted to raise the temperature of just under 4" of oil to 350 Deg F. The readout climbed steadily to 290 Deg F and stopped. My initial response was, needs more heat so cranked up the burner. Readout stayed at 290. Got suspicious and tried a known accurate thermometer - oil was at 440 Deg F and climbing rapidly. I don't fault the manufacturer. I was using its product in a manner it wasn't specifically designed for. So, why am I telling you I bought the wrong thermometer? Because I want to warn potential users to be aware that there may be a problem getting readouts of higher temps. You could end up with dangerously overheated oil. From other reviews I have seen this limitation is not present on all thermometers of this model. The pros for this device: easy to calibrate, accurate readings after calibration, clips securely to pot, easy to adjust depth of probe, easy to read Cons: Doesn't always stay calibrated, Water BP readings can vary by 20 to almost 50 Deg F. This is the reason for just 4 stars.

This review is for the CDN IRL500 InstaRead Long Stem Deep Fry Turkey Thermometer. I purchased this for a Fry Daddy electric deep fryer. Didn't read the description carefully enough. The front of the packaging says "for large deep fry containers" It would have been nice if they had been a bit more descriptive, The stem on this thermometer is 12" LONG!. On the back of the package It tells you how to deep fry a turkey which I though was very interesting but would never do. The good news is it seems to need a minimum 2" of oil to work. (there is an indentation on the stem exactly 2" from it's pointed end. The Fry Daddy has a suggested 2" fill line. The Fry Daddy also is said to " maintain a perfect frying temperature" so, not allowing the thermometer to touch the bottom I added oil to the 2' fill line and presto! it climbed up to 360ish degrees and stopped. I also boiled water in it and the temp held at 200 (actual boiling point in Fahrenheit is 212) so I'd say it works.

Seems to work.
I really like the clip it has, I wish they had the same one in a range for cheese making. I need to make some candy shortly and will update this if I have any issues after that.

Ordered this for my husband who just loves it. He likes to deep Fry everything so he wanted a gage for the non electric deep fry pot he made. He uses it often and has zero complaints.
