Does what it says on the box
Big ol cast iron pan. Deserves criticism because the lids to support all third party, but it does what I need it to do.

Thick, heavy and easy to clean
I love this pan. I slow cooked my vegetables without water and it did not burn. The vegetables came out delicious. When I received the package, I was upset that the shipper did not tape the box. The shipper, just shipped the pan in its own manufacturer's box and did not even bother to tape the box. When it was delivered to me, the person giving me the box had to put together the box since it was open and no tape to keep the box closed. I've used this pan several times and love the size and the thickness. However, there were changes happening in the middle of the pot. I thought that the changes were food that were stuck on the pan's surface. But after scrubbing it with a soft sponge, the changes on the pan's surface did not return to its original looks so it was not burned food. I put on my eye glasses and was able to see what was going on the pan. The top layer surface of the pan seems to have came off with the food that must have stuck on the pan. Was the top layer spray painted and could have easily came off with food?

Staub is always my "go to" Pan
What a marvelous pan. If there is anything better to fry in than a Staub pan I don't know what it is....it seems to me I've had one of everything, and they come and go, but the Staub fry and casserole pans stay and stay and stay...they are my "go to" pan and they go with me (to Korea, to Germany, to El Paso!!). For me, Staub pans are easy to maintain. I season them as outlined in the accompanying directions when received, and then prepare fried potatoes with onions for a maiden voyage. Perfection! After dinner I wash the pan and let it dry, then wipe a very thin coating of oil in it before storing. Two weeks or so later I use it again, no sticking, no issues at all. I experience no hot spots and everything in the pan browns evenly. An upside down pineapple cake came out beautifully. I cook with gas at the moment and I like them best with gas cooking only because browning seems better, but they work fine on an electric cooktop. I experienced no issues with a ceramic top either, and certainly they perform well in the oven (both convection and traditional). The investment in Staub pans had paid off for me.

Not as non stick as I expected.
I cook a lot, for small and large groups. I expected a pan at this price point to perform much better. Even heat and retains heat well. Things stick to the pan that I normally don't have trouble with. Yes, I read the instructions and used it as described, but it just doesn't do as I expected.

The Best Pan in My Kitchen
I own several pieces of Le Creuset but this Staub Braiser has become my most favored and used pan! Even heating, super easy to clean. Love the cast iron interior. It makes the best roasted chicken ever! You will not believe how beautiful the skin crisps. Plenty of room for a spatchcock chicken as well. A perfect grill pan for roasted vegetables too. My husband has also used it on his Treager with great results. If I could only have one Quality Piece in my collection, this braiser would be it.

Mine is not flat :(
I was very excited to get this pan and was assuming it'd be one of my 2-3 forever pans. But unfortunately I don't love it. The main issue is the bottom of the pan has a very, very slight crown or high spot in the middle that I noticed the first time I used it. It is pretty subtle but means that oil/fat tends to move away from the middle towards the outer edge which I don't love. I find myself as I'm cooking adding oil to the center hoping it will help reduce sticking. Otherwise, it is great. I like the look and still use it a lot though I'm probably going to replace it at some point. I had to find a random lid on amazon since I like having a lid. It would be nice if there was a real lid that you could get for it.

The best there is
This is an incredible pan. I don’t ever put it away as I use it for everything. From frying chicken cutlets, French toast (fits 5 slices), grilled cheese, baked chicken (fits in the Breville oven/toaster) to rice dishes, giant apple pie and the list goes on. The quality in my opinion is better than the other expensive brand. Love love love!

An enamelled cast iron frying pan.
Now I can sear and fry with cast iron and then deglaze with wine and no problem. Tomato or acidic recipes are also fine. This is Staub enamelled cast iron which means the seasoning is not so important as on say a lodge or other CI pan. Any mineralisation marks are soon removed by boiling some vinegar water for 5 mins and allowing to cool - voila! Good as new again.

Pricey, but well made (and worth it)
This is not your typical cast iron pan. The cooking surface is quite smooth with none of the rough texture in typical budget cast iron pans. It also appears to be enamelized slightly. Not the same as a Dutch oven but it does appear to have some hard coating on it. This is all good because it takes a seasoning and is easy to clean up. Best of all, without the rough texture food does not stick to it as it tends to in rough textured pans. There appears to be no downside to this coating. The pan’s bottom has a traditional glazed appearance (glossy dark green in my case) like a Dutch oven which is both lovely and practical. This is a pricey pan compared with the competition. But the upsides are worth it. Five stars.
