Great! But…
Stones came mounted sloppily. After frustrating difficult trying to align all three stones and tightening out at once. When you loosen one screw it loosens two stones, so it is pretty frustrating to have to adjust the stones because they were mounted sloppily from the manufacture. They came mounted in a way that you could not read the course/medium/fine indications, and one stone was hitting the edge of the reservoir and very slightly chipped.

I was pretty excited to order this item and couldn’t wait for it . Sadly for me IT WAS DEFECTIVE
I waited for this item, pretty excited. BUT CAME IN DEFECTIVE. One of the stones was chipped and had a whole in it. HAVE TO RETURN IT. I wonder why the return option does no offer an exchange option like they do with the other items. PLUS IT WAS ALL DIRTY! DIDN’T LOOK NEW AT ALL. First impression. ????‍♂️

Not your father's tri-stone
As an ex-military cook and having worked in the past in food service for over a decade, I've had more than my share of time with these. Now that I have my own nearly commercial kitchen for personal use, I decided to finally plop down the high price for one of these setups. I have to say that I am somewhat disappointed, and don't feel that what I received has the value to command the price. When I received the unit, the first thing I noticed was the somewhat flimsy plastic shell. It didn't have the heavy duty feel of the older units. Upon opening to inspect the stones, I was greeted with loose stones, and the most oft used (medium) stone had a 1/4" long chunk broken from one of the corners. The other stones were badly installed in the holder, with the stone's surface at an angle which was not parallel to the table the unit was sitting on. I literally spent an hour releasing the stones and aligning them so all three were parallel and showing a similar amount of stone above the hold-down bars. Why so long? Because the poorly bent metal pieces on which the stones sit, did not allow the stones to sit flat and always resulted in an angle when the stones simply rested on them. This resulted in many attempts to even out and re-adjust the stones positions, as one hold-down strip holds two stones. The stones are nice, and certainly do what they are supposed to. Unfortunately, it seems that cost savings measures and poor workmanship have dragged the product down from what I remember. There are ways to cut costs without sacrificing this much quality, all it takes is some good engineering and well thought out parts. I don't know if this is still a "Made in USA" product, but what I do know, is that I went through the same new item "teething pains" as I do with Chinese-made goods at a "Made in USA" price. I can't recommend this unit, unless you absolutely have to have the same unit you used when you worked in a restaurant, or have money to burn. The value just isn't there.

I'm a saddle maker so keeping my knives sharp is a full time battle
I'm a saddle maker so keeping my knives sharp is a fulltime battle they never are sharp enough. So I decided that it was about time to get me a good stone but make sure it's a good one. I remember over 40 years ago having one of these stones in my high school shop and it worked great then so I went ahead and ordered one. I managed to get five knives razor sharp in 20 minutes so it was a very good investment for me I should have broke down and bought one 40 years ago

This is the Gold Standard in manual sharpening.
Manual sharpening is the only good way to maintain professional quality knives and this is the very best setup to do it on. Ever since I moved on from cutting meat for a living I have wanted to get one of these for myself. It is not that hard to learn to use it properly and once you do you will never pick up a dull or even semi-sharp knife again. I had been trying to get by with the little 6" to 8" stones and every other gadget to sharpen my aging knives. They were all so unsatisfactory that when I finally bought a new set of Victorinox knives I immediately ordered this to maintain them. If an average person (not a butcher) bought a set of really good knives and learned to maintain them on this Oilstone they would likely last you your whole life.

Favorite sharpening stone by far!
I used to work as a meat cutter and we had one of these to sharpen our knives with. After I left that business, I was having a hard time finding another stone set that I liked. When I saw this online I got extremely excited and just knew I had to get it for myself. I can't tell you how much I enjoy bringing a knife to a sharp edge with this thing. It is a meditative activity for me and this makes it so easy and cuts down on mess because any excess oil just goes into the reservoir. I can't recommend this product enough. If you think you will do a decent amount of sharpening or have a knife collection that you want to bring to a razors edge, this is what I would recommend you do it with!

Solid investment
Ok, so you might be debating on the price as I was, but think of it as a lifetime investment because that's what it is...it will be the last knife sharpener you'll ever buy. Electric sharpeners eat knives up and don't hold a candle to this product. I own a restaurant and there is absolutely nothing worse than working with a dull knife. It makes doing your task a nightmare. So, with all that being said there is a small learning curve with it but not much, just get on YouTube to get the fundamentals down. Eventually you will begin to to sharpen your knife by "feel" in no time. I can't begin to tell you that with some practice your knives will be hair splitting sharp! A bit of advice is NOT to use the course stone unless you've got a very dull knife. The medium course stone followed by the fine grit can bring life back into your knife. If you really wanna get it to the next level you can strop it using leather after those two steps, but it's def not necessary. This product may be overkill for someone who cooks occasional, but for anyone who uses knives daily it's a solid investment and I can't praise the craftsmanship enough.
