Not the nonstick "unicorn" I'd hoped for.
UPDATE: I read in some reviews that GreenPan recommends against using extra virgin olive oil because it can cause a film to build up and lessen the nonstick. I looked that up on their website, and it’s true—they recommend refined oils which have higher smoke points and don’t create a film. Curious, I also Googled “how to restore ceramic nonstick,” and once again found the GreenPan site—which sells & recommends a melamine (yup—the same substance as “Melmac”) foam sponge & water. Something clicked: Mr. Clean Magic Eraser is also a melamine foam sponge, and I had a couple still in the box. Looking at the dull spot on the cooking surface and the rough sticky spots along the inner walls, I tried it: and the non-stickiness is back …for now. Will use coconut or grape seed oil or butter from now on, saving the EVOO for conventional nonstick or stainless steel pans. Next, I tackled the brown heat stains on the exterior pink enamel. Made a paste of Bar Keeper’s Friend, applied it, waited 5 minutes and scrubbed with a green “scrubby” cloth. The brown stains disappeared. Alas, no way to repair the chips in the enamel (especially those around the edge where the bottom disk meets the pan. But those won’t affect cooking, just look a bit worse for wear hanging on my pot rack. For good measure, I tried the same two steps on the Blue Diamond (on which fish skin began to stick a bit last night). It, too, worked. So I added a star—the reason there are 4 instead of 5 is that I had to do all of the above (it was not in the instructions that came with the pan) and the chips in the exterior enamel. ______________________________________________________________________________________ ORIGINAL 3-star review: Reading the reviews here, Consumer Reports, America’s Test Kitchen and various other cooking websites I trust, I had high hopes for this set--which I ordered when the conventional nonstick coatings of my All-Clad & OXO Good Grips pans began to wear out and I wanted to stop using PFAs. I had been "burned" before by cheaper ceramic (Copper Chef, Bialetti) pans that began sticking after less than a month, so the glowing reviews of this pricier Green Pan convinced me that a pan could be eco-friendly, durable and nonstick without the seasoning or upkeep of cast-iron or carbon steel. Fool me once... Despite the claims on this site of "tempered glass lids," the set did not come with lids. Haven't used this set's 10" skillet yet (I have a far less expensive Blue Diamond ceramic that seems to be holding up fairly well albeit used less often), but after only 5 months of cooking mostly eggs in the 8", this pan's still-slick-looking-and-feeling cooking surface has definitely lost much of its non-stick properties. I never heat the pan empty and never use any heat higher than medium--in fact, I use medium-low-to-low flame. I hang rather than stack my pans, to avoid scratching. I never use metal utensils--only plastic, silicone, rubber or wood. I always use a little olive oil or butter to aid release. I use only non-scratch-labeled sponges. My pans never see the inside of a dishwasher. And I never use cooking sprays. For the first month or two, eggs & omelets slid out effortlessly without using any utensils--then gradually I needed to use a nylon spatula to loosen a fried egg so it could slide. Then, omelets & scrambled eggs began sticking to the walls of the pan, and my last rolled omelet was a disaster--it broke apart when part of it stuck to the pan. Lately, I have had to scrape bits of egg off the surface almost every time. After gentle cleaning with dish soap and soft sponge, the cooking surface looks as pristine as when it was new but it sure doesn't act that way. And the blush pink exterior has stained very badly and irreparably. After reading a NYTimes Wirecutter review of nonstick pans that really slammed ceramic's short-lived performance--declaring it even less eco-friendly than newer conventional nonstick because it needs replacing at least two or three times as often, thereby adding to landfills because it can't be recycled--I went back to a conventional nonstick-surface 8" skillet by Tramontina, Wirecutter's top pick (which their testers report is still slick after a year). Oh, and did I mention that this Green Pan is twice as expensive right out of the box? All the glowing reviews of ceramic nonstick pans seem to have been written when the pans were new or barely-used. You can have a feel-good non-PFA surface, or dependable longer-lasting nonstick performance...just not in the same pan. Back to the drawing board.

Finally a durable non-stick finish
I've been trying out non-stick coatings since the 1960s and have never been very impressed; until now. The coatings are slick when new and with a month or two they deteriorate or scratch. I've always used plastic or wood utensils and kept temperatures low enough to prevent burning the coat. Basically babying the pans without success. I've been using two GreenPan units daily for 8 months now and I am impressed with the durability of the finish. So far no scratches....BUT The surface needs cleaning often by boiling water and then wiping with a Magic Eraser. it's easy and quick but the instruction this is not needed very often, I don't agree. My electric stove heats inconsistently, the pans follow the hot spots and don't distribute the heat very well. The instructions suggest that the non-stick surface should be used dry, well most things WILL stick. A brief spritz of Pam makes food slip around the pan just like the commercials depict. The surface is showing slight (and I mean slight) signs of discoloration, I'm hoping this has no effect. Time will tell. So summing up, is the finish is far more durable than anything I have used. It is slick if you use a tiny bit of cooking spray but not when dry, and heat transfer is spotty. I gave it 5 stars because durability means a lot and this is the best I've seen in the entire history of non-stick coatings. If it wears out tomorrow, I'd buy again.

so far, so good
i have had these pans a month now, and they work very well as long as you follow the rules. no metal utensils, hand wash - no dishwasher, use soft side of scrub sponge (yes they clean that easily). heat with some oil in there for 90 secs, then add food. let cool before cleaning. all good so far. my non-stick teflon pans lasted about 2 years, i am hoping for the same here. we'll see.

They're good, not great
Pro: Super easy to clean and overall does a good job with heat distribution Con: I've only had for a month or so and see a few tiny chips in the enamel. I also think the sides of the skillets aren't tall enough or not what I'm used to with every other skillet I've had.

2 Months of every day use and still very satisfied
We bought these after extensively researching "healthy" non stick cooking pans. We wanted something safe for our family, that would also be easy for our kids to use and clean every day (thus why we didnt go with cast iron or stainless steel for example). We looked at Caraway and the Always Pan (even bought and returned it). And so far after 2 months of every day use we are extremely happy with the GreenPan! What we like: - Value: you get 2 for about the same price as 1 with the other brands - Look: it looks great on the stove and matches our kitchen's gold accents - we definitely don't mind keeping them out - Ease of Use: the product does what it says! it's super non-stick, and super easy to clean - Joy to Use: it's actually now such a joy to cook an omelet for example that was just a disaster to try and cook with our old pans. - Size: the 2 sizes here are perfect for what we need. We use the smaller one the most (almost every day), and the larger one is also great for bigger meals. What we don't like: - Bottom: it seems the bottom is staining and we're not sure how to clean it (although I havent spent much time trying to figure this out). See pic. Not a huge deal as not really very visible. - Nicks and Scratches: you just have to be really careful of the top surface, and keep anything metal or hard aware that could scratch it. we have a few nicks around the edges and one scratch now on the pan where someone forgot this. - Size: the pans could have a higher side wall (especially the larger pan) that would allow more food to be cooked. But this is a small thing. What we recommend and have learned: - Follow the instructions! We ruined our last set of non-stick pans by not following the manufacturer instructions carefully so we've been sure to follow them with this set and also make sure the kids do too. - We bought specific sponges to clean them (Vileda Scrunge Multi-Use No-Scratch Scrub Sponge) and even with these we rarely use the tough side and almost always clean with the soft side (food easily comes off especially if run under hot water first). We don't put in the dishwasher, and we clean pretty soon after use after it's cooled down. - We always put a bit of oil or butter in the pan first and spread around - We never cook on high heat (we have a gas stove), always on low to medium (which is totally fine for everything) - We're careful about temperature shock - we never to put something cold (like water) directly on the pan when it's hot and vice versa. - We only use silicone cooking utensils I'll likely come back and revise this review in 4 months.

Excellent pans
These live up to the hype. Use them properly and nothing sticks, food slides out and they wipe clean easily. They look great too, nice colour and gold tone handles. I definitely recommend these.

great products but overall I am disappointed in the poor packaging the distributer has used resulting in visible scratches in the enamel of these pans upon receipt. i wouldn't suggest ordering from them
